Jaffa Custard

Last week I attended a Thermomix cooking class with my Mum, and also run into a good friend there (with whom, at one point, I got the giggles!) 

It was a fun night, the first TM cooking class for our area and I thought the girls did a great job.

One of the recipes we got to sample was Jaffa custard, it was delicious! But on the ride home (thanks mummy!) I could feel my stomach cursing me for consuming custard made on full cream dairy milk.


I make the TM Everyday Cookbook custard recipe on almond milk all the time so I thought I'd give this Jaffa one a go. It was awesome!!!




Place in TM bowl
100g dark organic chocolate
Grate on Speed 8, 10 seconds
Remove from bowl and place aside.

Place in TM
Zest of one orange
60g rapadura
Blitz on Speed 9, 20 seconds.

Add:
50g cornflour
2 eggs
500g of your choice of milk; almond/dairy/cashew
Cook for 6 minutes at 90c, Speed 4

Add back in:
Grated chocolate
Cook for a further 2 minutes at 90c, Speed 4.

Green Soup - Deliciously healthy.

I'm back....we've had a crazy couple of months in our household. And can't see any normality on the horizon anytime soon, looking forward having more cooking time one day in the future!
Anyhoo this soup is delicious. And so very healthy. It's based on Sarah Wilson's 'Cheesy Green Mish-Mash Soup'.
It could easily be made on the stove top and whizzed with a stick blender, if no Thermomix is available.


Place in Thermomix:
1 Onion, peeled and cut in half
2 garlic cloves, peeled
Speed 6, 7 seconds.

Scape down sides and add:
40g Coconut oil
Cook 3 mins, 100c on Speed 2

Add:
2 zucchinis, roughly chopped
2 sticks celery, roughly chopped
Chop on Speed 6, 10 seconds

Add:
1 medium head broccoli, roughly chopped
Chop on speed 6, 10 seconds

Add:
2 tbs Thermomix vegetable stock 
1 ltr water 
(or a litre of your choice of stock)
Cook 17 mins, 100c, Speed 2

Add:
Small handful rocket
Small handful Corriander
Salt & Pepper, to taste
Juice of 1 lemon
Blend on Speed 6, 10 seconds.

Serve hot! You can add some grated cheddar cheese to serve if you wish, but it's totally yummy without it.

Cashew Crepes

Earlier this week my cupboards were looking pretty bare as I was wondering what to feed Abigail for lunch. I decided on pancakes but I didn't have any almond milk for my normal Pancake recipe. I did however have 5kgs of cashews! So...... I introduce to you my cashew crepes....




Place in Thermomix:
100g cashews
Speed 9, 25 seconds

Add:
600g water
Speed 9, 45 seconds

Add:
200g gluten free flour
40g macadamia oil
4 eggs
Pinch salt
1/4 tsp vanilla powder
20g rapadura (omit for savoury crepes)
Speed 5, 30 seconds.

Cook crepes in frying pan on high heat.

Serve with honey and fresh fruit.

Choc Crunch Protein 'Ice Cream'

This is so yummy, totally tastes like it couldn't be good for you. The cacao nibs give it a nice choc chip crunch.




3 bananas, frozen in 2cm lengths
Place in thermomix Speed 8, 15 seconds. Scrape down sides and repeat.

Add
2 tbs pure maple syrup
1 tbs cacao powder
1 tbs sprouted brown rice protein powder (or your choice of protein powder)
1 tsp cacao nibs
Speed 8, 15 seconds.

Serve immediately, serves 2.

Dairy Free Banana 'Ice Cream'

Delicious, simple dairy free Ice Cream......need I say more.



3 bananas, chopped in 2cm pieces and frozen
Place in thermomix speed 8 for 15 seconds. Scrape down sides and repeat.

2 tbs maple syrup
Add to thermomix, along with the butterfly attachment.
Speed 4, 30 seconds.

Enjoy as is or top with chopped nuts, cacao nibs, bee pollen or whatever you desire.
Serves 2.

2 Ingredient Cookies. Dairy free.

I stumbled across this idea somewhere on the web recently and made a mental note to try it out. 2 ingredient cookies, what a great idea for busy people.
Sooooo the name is kinda deceiving, the base is simply 2 ingredients and then you can build from there, or I guess not if you chose to. They're dairy free depending on your add ins. The first time I made these my husband tried one straight out of the oven and wasn't overly impressed, but after sitting for about 15 minutes the flavour greatly improved. I wouldn't say these are my most favourite cookies ever (having said that I have my second batch in 2 days currently on the go) BUT they are tasty, super fast to make and don't require any ingredients that you wouldn't have on hand.




So the base is:
2 medium sized bananas, mashed
1 cup organic rolled oats

Simply mix these together in a bowl then add your flavours of choice.

I've done:
1/2 tsp cinnamon
1/2 cup chopped pecans
1/2 dried organic cranberries
And they were yummy.

In the oven I've currently got:
2 tsp cacao powder
1/2 cup organic raisins
1/2 cup chopped, black & greens 70% dark chocolate

The possibilities are endless....

Once you have added your flavours check the consistency.
 - Try not to add to many add ins as they can become dry.
 - Also bananas obviously vary in size so if mixture is to wet add a sprinkle more oats. They need to hold together when rolled into a ball.

Roll into balls, about 14, and place on cookie trays lined with baking paper. Slightly flatten the balls with your hand.

Bake on 180c for about 12-15mins, until golden. And remember to let sit for 15 minutes or so, to enjoy their full flavour.

Superfood Smoothie: Just like a chocolate milkshake only healthy!

We are big on smoothies here, we store this in our large flasks and enjoy it throughout the day. It is very tasty, satisfying and full of superfoods. 




Place in thermomix or power blender:
1 frozen banana
1 tray ice
5 brazil nuts
1/3 cup goji berries
3 cubes frozen coconut or 1 tbs coconut oil (we buy drinking coconuts, blend the flesh & water together, then freeze in ice cube trays)
Blend speed 8, 20 seconds.

Add:
3 cups water
1 cup almond milk
3 tbs sweetener eg; honey, agave, pure maple syrup or a couple of dates
1/2 tsp ground cinnamon
1/2 tsp vanilla powder or 1 vanilla bean
1tbs rice protein powder
1tbs green powder
3 tbs cacao powder
1 pinch himalayan rock salt, ground
1-2 tbs aloe vera juice
1 avocado
Blend speed 8, 2 minutes.
Serves 2 (fills 2 flasks)
